Adding fresh coals and wood chunks to each side of the grill
Hold your beef brisket and the other side as high as 275°F to quickly cook some potatoes as a side dish
Load half of the hot coals onto one side of the grill and use the other half on the other side to create two equal cooking areas or zones.
Place a drip pan under where you will be cooking your beef brisket in order to catch any drippings from it.
Once you’ve got your grill going, place beef brisket fat-side down over low heat (225°F) and close the lid. Let it cook for 4 to 6 hours or until beef brisket is fork tender.
