Beef Brisket Charcoal Grill Recipe

  • Charcoal Grill


  • 5 to 10 Pounds beef brisket
  • 1 tbsp Coarse Salt (Kosher or Sea)
  • 1 tbsp Chili Powder
  • 2 tbsp Sugar
  • 1 tbsp Freshly Ground Black Pepper
  • 1 tbsp Ground Cumin
  • 1 Bag Mesquite Wood Chunks, Soaked in Water 
  • Charcoal
  • Aluminum Pan, for water
  • Heavy-Duty Aluminum Foil


  • Adding fresh coals and wood chunks to each side of the grill

  • Hold your beef brisket and the other side as high as 275°F to quickly cook some potatoes as a side dish
  • Load half of the hot coals onto one side of the grill and use the other half on the other side to create two equal cooking areas or zones.
  • Place a drip pan under where you will be cooking your beef brisket in order to catch any drippings from it.
  • Once you’ve got your grill going, place beef brisket fat-side down over low heat (225°F) and close the lid. Let it cook for 4 to 6 hours or until beef brisket is fork tender.



The beef brisket for smoking sauce recipe calls for beef broth, beef consomme, beef bouillon cubes or beef base. You can also try using beef stock from a jar if that is what you have on hand.

The meat should be wet and tender with no drying out or gristle in sight! You can serve it simply sliced for dinner or make an amazing sandwich , tacos by adding some sauce before stacking up your burnt ends onto fresh cut onions (not mandatory).
Serve warm on buns, or with a side of coleslaw or barbecued beans, for a typical Texan treat!
