Brisket is a beef piece from the breast or lower chest. It is might  be known as  a tough cut of meat, so it’s best when cooked low and slow. Brisket needs a lot of hitting time in terms for it to become moist and flavorful.

This pieces of meat is flavorful and tender after being smoked low and slow. It pairs well with any barbecue sauce, but if you want to keep it simple, try salt and pepper. You can cook this on your charcoal grill or gas grill. If you have never cooked a brisket before, just follow these easy steps: 1) season 2) smoke 3) wrap 4) rest 5) slice 6) serve. Simple!

Ingredients
  

  • 5 to 10 Pounds beef brisket
  • 1 tbsp Coarse Salt (Kosher or Sea)
  • 1 tbsp Chili Powder
  • 2 tbsp Sugar
  • 1 tbsp Freshly Ground Black Pepper
  • 1 tbsp Ground Cumin
  • 1 Bag Mesquite Wood Chunks, Soaked in Water 
  • Charcoal
  • Aluminum Pan, for water
  • Heavy-Duty Aluminum Foil

Instructions
 

  • Adding fresh coals and wood chunks to each side of the grill

  • Hold your beef brisket and the other side as high as 275°F to quickly cook some potatoes as a side dish
  • Load half of the hot coals onto one side of the grill and use the other half on the other side to create two equal cooking areas or zones.
  • Place a drip pan under where you will be cooking your beef brisket in order to catch any drippings from it.
  • Once you’ve got your grill going, place beef brisket fat-side down over low heat (225°F) and close the lid. Let it cook for 4 to 6 hours or until beef brisket is fork tender.

Notes

Sauce

The beef brisket for smoking sauce recipe calls for beef broth, beef consomme, beef bouillon cubes or beef base. You can also try using beef stock from a jar if that is what you have on hand.
Ingredients:

3 tablespoons vegetable oil 1 medium onion, finely diced 2 cloves garlic, minced ½ cup chili sauce ¼ cup tomato paste 3 tablespoons dark brown sugar 1 teaspoon Worcestershire sauce 1 Dijon mustard ½ teaspoon beef bouillon 1 teaspoon hot sauce Salt and pepper to taste

Serving

The meat should be wet and tender with no drying out or gristle in sight! You can serve it simply sliced for dinner or make an amazing sandwich , tacos by adding some sauce before stacking up your burnt ends onto fresh cut onions (not mandatory).
Serve warm on buns, or with a side of coleslaw or barbecued beans, for a typical Texan treat!

How to smoke a beef brisket on a charcoal grill?

Here I will be going over how to smoke a beef brisket on a charcoal grill. This method has been tried and true by many  grill enthusiasts and can help you make the perfect barbeque beef brisket.

 

1.Preparing Your Charcoal Grillbbq beef brisket charcoal grill

 

Prepare your grill for indirect cooking by removing the grill grate and then placing about 10 pounds of charcoal on one side of grill (if using a gas grill, adjust according to manual instructions). Leave other half without charcoal; place grill grate back on grill.

 

2.Preparing Your Brisket

 

Next, you will need to prepare your brisket starting with the side that has the fat cap. This is a thick layer of fat that coats the top portion of the brisket and will be especially important as it aids in protecting the meat from drying out during cooking.

Remove the fat cap by making a horizontal cut just below it. Flip your brisket over so you are looking at the leaner side.

Now, you will apply your dry rub liberally to all sides of your brisket. Place enough dry rub on it until it has a light layer covering each side of the brisket. Place a few pats of butter over the top of the brisket and then sprinkle a little bit more dry rub on top.

 

3.The Smoking Process

 

Begin smoking your beef brisket by placing it directly over the charcoal grill grate that has no charcoal on it. Close grill lid and allow to smoke for 5 hours, checking occasionally to see how your brisket is coming along.

After 5 hours of smoking, remove the grill grate holding the charcoal and fill a pan with about a cup of water. Bring it over to grill and place the grill grate from the charcoal grill back on top of grill, but this time placing it on top of grill grate that has no charcoal underneath. This is the grill grate that your brisket has been resting on.

How to smoke the corned beef brisket on the charcoal grill?

Smoked corned beef brisket is one of the most popular recipes on grill . But this time we will show you how to do it with charcoal grill.

Smoking corned beef Bellow are listed ingredients for smoking corned beef:

Corned beef brisket – 5 pounds

– 2 tablespoons ground black pepper

– 1 tablespoon onion powder

– 1 tablespoon brown sugar grill seasoning  mix (if you don’t have it just mix all dry spices together). You can buy grill seasoning here Use oak or hickory wood for smoking the corned beef. If using charcoal grill, place coals on one side of the grill only.

Cover grill with lid, making sure air vents are open. Let grill heat up until temperature reaches 250 degrees.

 

While grill is getting ready, remove corned beef from packaging. Rinse thoroughly with water to remove the excess salt. Pat dry with paper towel. Apply grill seasoning rub on both sides of the corned beef brisket.

Place corned beef fat side up on grill grate over indirect heat section of grill for 4 hours or until internal temperature reaches 165 degrees at thickest part of the corned beef.

Close grill cover and continue cooking until internal temperature reaches 195 degrees.

 

How long I need cook a brisket on my charcoal grill?

There are many factors that can affect your brisket cooking time, but if you’re looking for an estimate of how long it takes per pound on a charcoal grill then here’s what I found: 20 minutes over medium coals or near the fire with searing’s allowed at 1 hour per pound.

If slow-cooked in 250 ̊F ovens make more sense to you than open flames then go ahead and use them!

 

Should you wrap a brisket in foil?

Yes! Smoked meat cooked using the Texas Crutch method (wrapped with butcher paper or foil) is incredibly juicy and full of flavor.

Foil is an excellent choice when it comes down to which wrapping material for cooked food because of its ability not just seal in juices but also create them from whole-cooked steaks or other meats that require longer brining periods before they’re ready for consumption such as Hamptons pork shoulder (which we covered here).

In this case though, rather than compromising on taste by only using paper -which won’t help us achieve juicy perfection-, I recommend going ahead.

 

How do you keep brisket moist?

Do you know the best way to keep your brisket moist? Start by wrapping it tightly in foil about halfway through cooking time. This will help make sure any moisture doesn’t escape and ensures a delicious meal!

As an added bonus, water pans work wonders at retaining all that tasty juice inside of them. After 2-3 hours start spritzing with either apple juice/water mixture every 30 minutes or so; and when its done remove from heat source immediately but leave wrapped lightly.
