Lemon Chipotle Chicken
After coming up with Chipotle Carrot-Apple Butter for Tigress’s February CanJam, I had a few leftovers – a couple carrots, an extra lemon and of course, a whole can of chipotle peppers in adobo sauce. Before I pureed the rest of the chipotle peppers, I decided to do a little improv on my basic Skillet Chicken. February CanJam: Chipotle Carrot-Apple Butter
At the end of each month, the can-jammers participating in Tigress’s Can Jam are delivered the news – a “secret ingredient” for the next’s month designed to extend their canning repertoires. I got my first seed catalog in the mail this week – and two days later, my first Food Preservation Workshop notice of the season from Kathleen Quinn-Jacobs at IthaCan.
IthaCan is a is a web-based social network through which home food preservers in Tompkins County organize food preserving events and share information. I’m in Syracuse, NY – not Ithaca – but the group is only about an hour down Rt. 81 from me…45 minutes if I can go the back way and the weather doesn’t take a nasty February turn. Last Monday I picked up a cup of Steak House Soup from a local deli – The Brooklyn Pickle. I was expecting in that bowl to find the tastes I love when I order a steak dinner – sweet-hot caramelized onions, earthy mushrooms, garlic and beef accented with a little tang of steak sauce.
